Einstein laid the groundwork for nearly all natural health care models when he showed the world that everything, including the human body, at its most fundamental level, is vibrating energy that follows natural laws.  Health is the result of cooperating with these natural laws of our being, and science supports the premise that there are no nutrients in animal-based foods that are not better obtained by plant-based foods.

Many people believe that humans are vegetarian by nature, or design, though many of us are omnivorous in practice, eating both plants and animals. There are some clues that would lead us to believe that we are biologically vegetarians, including the facts that we have a relatively long digestive tract, through which meat tends to putrefy before leaving, and we lack claws and fangs to tear up meat.

Animal based foods offer a feast of casein protein, saturated fat, and free radical damage while being devoid of the protective effects of antioxidants, complex carbohydrates and fiber. In contrast to plant proteins, that contain the essential amino acids needed for the functional and structural components of our bodies, animal protein contains casein, a dangerous, toxic, highly carcinogenic substance. Casein is to cancer what cholesterol is to heart disease. Meats are also among the most toxic of naturally occurring foods due to the pesticide concentrations stored in the tissues.  The levels of concentration are often 10-15 times more than that in plant tissues.

Complex carbohydrates, once defamed by fad diets, are back in vogue. Considered to be the healthiest of foods, complex carbs, in their unprocessed, natural, unrefined state, give us essential vitamins, minerals and energy. Additionally, the fiber content of those foods does far more than ease physical elimination. Fiber plays a vital role in ridding the body of harmful, toxic, and carcinogenic substances, as well as excess hormones. Elevated hormone levels increase cancer risk. Fiber binds with these substances in the intestine and flushes them out of the body, thus preventing a vicious cycle of recirculation of harmful substances in the bloodstream.

The role of antioxidants is a miraculous dance between us and all of nature. The cancer fighting properties in plants, antioxidants, protect plants against highly oxidating chemicals as a result of photosynthesis. Those benefits come to us when we consume antioxidant rich foods such as colorful fruits and vegetables. The carotenoid family of antioxidants are identified by their color. The yellow/oranges of squash and carrots give us beta carotene, and the reds of tomatoes and watermelon give powerful lycopene. Other antioxidants are colorless as in the micronutrients, Vitamins C and E. These antioxidants stand guard over our cells and, like piranhas, attack the free radicals that are intent on damaging cell DNA. Once again, plant based foods offer protection.

Raw Vegan Chocolate Pudding Recipe

Looks and tastes like regular chocolate pudding… vegan, raw and pale!

1 medium ripe avocado, chopped
2 Tablespoons unsweetened cocoa powder
1 – 2 Tablespoons raw honey (could use a few soaked dates)
6 Tablespoons almond, coconut, or flax milk
Pinch of sea salt
1/2 Teaspoon vanilla

Place all in blender. Start on low and slowly move to high… blend until smooth. Add a little more milk to thin if necessary. Sprinkle with coconut flakes and nuts.

~1lb of string beans
~2lbs of zucchini
~a handful of curly parsley
~enough water to cover your veggies

–Into rapid boiling water add above and boil for 10-15 min until for goes through outside of zucchini
–puree using the cooking water (amount of liquid will very based on your desired consistency)

RAW VEGAN PUMPKIN PIE with WHIPPED COCONUT CREAM

RAW VEGAN PUMPKIN PIE with WHIPPED COCONUT CREAM

Crust:

1 cup walnuts

1 cup almonds

2 cups raisins

Pinch of salt (optional)  

Pie filling:

1 sugar pumpkin, peeled, seeded and cubed (about 6-7 cups) 

1/4 cup melted coconut oil 

3-5 tablespoons coconut nectar or other preferred sweetener

1 teaspoon cinnamon

1/2 teaspoon each of nutmeg, ginger and cloves 

To make the crust: pulse the nuts in a food processor until they’re crumbs, add the raisins and salt and process until it begins to stick together. Press into a pie dish and put in the fridge.

To make the filling: blend all the ingredients until smooth, adding however much of the spices you like. If it’s quite runny, let it thicken in a bowl in the fridge. Spread into your crust and refrigerate overnight until it’s set. Slice and serve with whipped coconut cream.

WHIPPED COCONUT CREAM

1 refrigerated can of full-fat coconut milk 

Touch of vanilla extract

2-3 teaspoons of maple syrup

Place the mixing bowl in the freezer 5 minutes before making the cream. When ready, remove the can and open it upside down. Pour out the liquid milk on top (save for a smoothie or another recipe). Scoop our hardened cream at the bottom, whip with mixer. Add maple syrup and vanilla. 

 
 

Flax Cracker Recipe

Gluten and Grain Free Flax Crackers…

2 1/2 Cups golden flax seeds (soaked in filtered water for 8 hours)

1 cup carrot juice

1 cup carrot pulp

1/2 teaspoon garlic powder, and 2 teaspoons of your favorite herbs

1 teaspoon sea salt

Combine all ingredients in a large bowl. Mix well. Prepare 3 large dehydrator trays with Teflex sheets. Divide mixture into 3 pieces, and spread each 1/4 inch think on trays. Dehydrate at 115 degrees, and flip crackers when the tops are feeling dry. Dehydrate for a few more hours.

1 zucchine or yellow squash

1 avocado

1 green apple

Sesame Milk Recipe
4 – 5 cups water
1 cup sesame seeds
2 medjool dates
a touch of vanilla
a pinch of salt

Put all ingredients in blender. Blend on high for a minute, then strain mixture through a fine sieve or nut milk bag… enjoy! Add frozen strawberries and blend again for a great strawberry shake.sesamemilk
