Animal based foods offer a feast of casein protein, saturated fat, and free radical damage while being devoid of the protective effects of antioxidants, complex carbohydrates and fiber. In contrast to plant proteins, that contain the essential amino acids needed for the functional and structural components of our bodies, animal protein contains casein, a dangerous, toxic, highly carcinogenic substance. Casein is to cancer what cholesterol is to heart disease. Meats are also among the most toxic of naturally occurring foods due to the pesticide concentrations stored in the tissues.  The levels of concentration are often 10-15 times more than that in plant tissues.

Complex carbohydrates, once defamed by fad diets, are back in vogue. Considered to be the healthiest of foods, complex carbs, in their unprocessed, natural, unrefined state, give us essential vitamins, minerals and energy. Additionally, the fiber content of those foods does far more than ease physical elimination. Fiber plays a vital role in ridding the body of harmful, toxic, and carcinogenic substances, as well as excess hormones. Elevated hormone levels increase cancer risk. Fiber binds with these substances in the intestine and flushes them out of the body, thus preventing a vicious cycle of recirculation of harmful substances in the bloodstream.

The role of antioxidants is a miraculous dance between us and all of nature. The cancer fighting properties in plants, antioxidants, protect plants against highly oxidating chemicals as a result of photosynthesis. Those benefits come to us when we consume antioxidant rich foods such as colorful fruits and vegetables. The carotenoid family of antioxidants are identified by their color. The yellow/oranges of squash and carrots give us beta carotene, and the reds of tomatoes and watermelon give powerful lycopene. Other antioxidants are colorless as in the micronutrients, Vitamins C and E. These antioxidants stand guard over our cells and, like piranhas, attack the free radicals that are intent on damaging cell DNA. Once again, plant based foods offer protection.
